25 Dec 2018 Professional Chef Guides Nutrition & Dietetics Students in Developing Healthy Recipes
Students in the IMU‘s undergraduate programmes of Bachelors in Nutrition (Hons) and Dietetics with Nutrition (Hons) undertake a module in Food Service Management Module. As part of this Module, students from the 2015 cohort went an extra mile to develop healthy recipes with the guidance of their lecturers. The recipes incorporated the principles of healthy eating along with their nutrient content.
The students prepared their developed recipes and presented them to Chef Muluk from NESTLE. Chef Muluk, helped in fine tuning the cooked recipes. About 87% of the recipes developed received approval of Chef Muluk. He also guided the students on some tricks in food preparation and how to make the food appealing. He shared his experiences in quantitative cooking to enable the students to appreciate the cooking process.
In this project, the students applied the knowledge and skills gained and put them into practice. They prepared lunch boxes based on the nutritional needs of an individual. They planned menus for quantity food production together under the guidance of Chef Muluk and the faculty.
To train students in their entrepreneurial skills, the recipes were cooked in large quantities and the students were expected to sell their recipes in the form of healthy lunch boxes. The title of this project was “Healthy Lunchbox Project“. They promoted their lunch menu through social media, Facebook, and other means. The students received an overwhelming response for their meal orders .The feedback received on their lunch boxes was excellent. The encouragement received through their feedback made them believe that they can do wonders with dedication and effort.
